Lemon couscous with cress

Ingredients for 2 servings:

  • 200 g couscous
  • 1 tbsp olive oil
  • 500 ml water
  • 2 garlic cloves
  • 1 lemon(s)
  • 1 tsp salt
  • 1 pinch of pepper (lemon pepper)
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 box of cress

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Brown the couscous in olive oil. Add water and bring to a boil. Peel the garlic clove, peel one lemon rind, and add it to the couscous. Let it simmer over low heat for about 12 minutes. Mix with lemon pepper, lemon juice, and olive oil. Finely chop the cress leaves and fold them into the couscous mixture. Grate the lemon rind into fine strips and garnish the couscous with them.
