Zotti's fish pan with rice

Ingredients for 4 servings:

  • 2 pointed peppers, r
  • 1 m.-large zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 3 fish fillet(s) (Pangasius), if frozen, thaw
  • some vegetable broth
  • salt and pepper
  • Herbs, mixed, frozen or fresh

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Delicious fish stir-fry with zucchini, pointed peppers, and pangasius fillet. Quick and easy.

Add a little olive oil and a splash of water to a pan and heat. In the meantime, dice the onions, bell peppers, and zucchini. Add everything to the pan and sauté, then deglaze with a small amount of vegetable stock. Dice the pangasius fillet and add it to the pan with the vegetables. Season with salt and pepper. Simmer over medium heat until only a little liquid remains. Now add the herbs and let it simmer for a few minutes. Serve with basmati rice.
