Ingredients for 1 servings:

  • 500 g flour
  • 40 g fresh yeast
  • 150 ml milk, lukewarm
  • 2 onions
  • 1 bunch of parsley
  • 1 bunch of chives
  • 100 g bacon
  • 200 g hard cheese, spicy
  • 100 g sour cream
  • 1 tsp salt
  • 2 eggs
  • 1 egg white
  • 1 egg yolk
  • 1 tbsp milk

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 2 hours 25 minutes

Sift the flour into a large bowl. Make a well in the center, crumble in the yeast, and pour the lukewarm milk over the yeast. Let it rise for about 10 minutes. Meanwhile, peel and chop the onions. Chop the herbs and bacon, and grate the cheese. Then add the sour cream, salt, eggs, and egg whites to the pre-dough and knead into a dough. Add the onion, herbs, bacon, and cheese and knead. Cover and let the dough rise for about 60 minutes. Then knead again, shape into three 30cm long strands, and braid them. Place the braid on a baking tray, cover, and let rise for another 30 minutes. Mix the egg yolk and milk and brush the plait with the egg yolk and milk and brush over the bread. Bake in a hot oven at 180°C (top/bottom heat) on the middle rack for about 40 minutes.
