Ingredients for 1 servings:
- 25 g almonds, chopped
- 25 g basil
- 2 tbsp agave syrup, more to taste
- ½ lemon(s), juice – possibly also zest
- 2 tbsp almond oil, possibly more
- pinch(s) of salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Lightly toast the almonds in a pan, then let cool. In a tall bowl, combine the almonds and basil with the agave syrup, almond oil, and lemon juice using a hand blender. Season to taste with a pinch of salt and more agave juice if desired. Adjust the consistency with a little more almond oil if necessary. Blend thoroughly again until a smooth pesto forms. This pesto tastes great as a special addition to fruity desserts. Simply place a small dollop on a dessert plate. The specified amount of ingredients yields approximately one 80 ml jar of pesto, depending on the amount of agave syrup and almond oil used.
