Minestrone Milanese Style

The perfect minestrone milanese style recipe with a picture and simple step-by-step instructions.

  • 500 g Boiled beef
  • 500 g Beef leg slice
  • 100 g Onions
  • 1 pole Leek
  • 300 g Celery sticks
  • 100 g Carrots
  • 350 g White cabbage or savoy cabbage
  • 2 Kohlrabi
  • 200 g Green beans
  • 300 g White beans
  • 200 g Peas frozen
  • 2 Garlic cloves
  • 200 g Tomatoes
  • 200 g White beet fresh
  • 100 g Potatoes
  • 2 tbsp Olive oil
  • Salt and pepper
  • 120 g Soup noodles
  • Nutmeg, basil, marjoram, thyme
  • Freshly grated Parmesan
  1. Wash the boiled beef and leg slice, put on and cook a strong broth. Remove the meat and cut the boiled beef into fine cubes.
  2. Peel and dice the onion. Clean the remaining vegetables and cut into fine strips. Wash the tomatoes, peel them off, cut out the stems, cut in half and core. Peel the potatoes and cut into small cubes.
  3. Heat the oil in a saucepan, add the vegetables, without the potatoes and tomatoes, and fry them. Top up with the meat stock, finely chop the garlic and add to the stock. Now add the potatoes to the broth as well. Now all the vegetables are in the broth. Let simmer for 20 minutes. After 10 minutes, add the soup noodles to the saucepan and season with salt, pepper, nutmeg, basil, marjoram and thyme. Add the tomato pieces 5 minutes before the end of the cooking time.
  4. Serve the Parmesan cheese separately.
