Pesto schnitzel with ham and mozzarella

Ingredients for 4 servings:

  • 125g mozzarella
  • 4 chicken schnitzels
  • 2 tbsp pesto rosso
  • e.g. salt and pepper
  • 4 slice(s) ham, raw
  • 100 g flour
  • 2 eggs
  • 100 g breadcrumbs
  • 70 g parsley, chopped
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the mozzarella into 5 mm thick slices. Rinse the schnitzel, pat dry, and flatten if desired. Season with salt and pepper. Spread one side of the schnitzel with pesto, top with ham and mozzarella. Fold the schnitzel over and secure with wooden skewers. Place the flour in a shallow dish, beat the eggs, and mix the breadcrumbs with the parsley in a shallow dish. Coat the filled schnitzel in the flour, eggs, and breadcrumbs. Heat oil in a large pan. Fry the schnitzel for 10-15 minutes on all sides. Serve with potato and cucumber salad.
