Schnitzel in spicy vegetable sauce

Ingredients for 4 servings:

  • 4 pork schnitzels or turkey schnitzels
  • 1 vegetable onion(s), peel, halve, cut into rings
  • 3 bell peppers, colored, clean and cut into small strips
  • 1 zucchini, diced
  • e.g. garlic, diced
  • 1 jar Hungarian-style paprika sauce
  • 1 jar pickle(s), cut into small pieces
  • 4 tbsp oil
  • salt and pepper
  • ¼ liter vegetable broth
  • Flour or other binding agent
  • Paprika powder, sweet and schnitzel seasoning salt

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

simple and delicious

Brown the schnitzels (breaded if desired—I leave them unbreaded) in hot oil and season generously with salt, pepper, paprika, and schnitzel seasoning salt. Remove the meat from the pan and sauté the onion, garlic, and finely chopped vegetables in the meat broth. Deglaze with vegetable broth and a little vinegar (from the pickles), then simmer the vegetables until tender. Return the meat to the pan. Finally, remove the meat from the pan again and stir in the paprika sauce. Thicken the sauce with a sauce thickener (you can choose whichever you prefer—I use locust bean gum in this case, as it has no calories or carbs). Serve with a salad of your choice and French fries.
