Instructions

quick, easy, inexpensive and incredibly delicious!

Cook the rice in salted water according to the package instructions, then drain and allow to evaporate. While the rice is cooking, wash the chives, shake dry, and cut into fine rolls. Cut the ham into thin, short strips. Whisk the eggs with the milk and salt. Heat the oil in a large, non-stick pan. Reduce the heat to medium and fry the ham strips for 1 minute, then add the egg wash, stirring constantly until the mixture begins to thicken. It should remain creamy and soft; if necessary, remove the pan from the heat briefly. Turn the heat up to full. Add the rice, stock powder, and chives and stir with a spatula for 2-3 minutes until everything is evenly hot and mixed. Season to taste with pepper, paprika and/or curry powder, and/or other favorite spices and herbs, and serve immediately. This rice dish is enough for two adults with a healthy appetite as a main meal.
