Gnocchi with spinach and salmon

Ingredients for 6 servings:

  • 1,200 g gnocchi, from the refrigerated section
  • 500 g leaf spinach, frozen
  • 250 g salmon fillet(s), frozen
  • 250 g cherry tomatoes
  • 200 g cream cheese
  • 100 ml milk
  • 1 onion(s)
  • oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Thaw the salmon fillets and spinach. Wash and quarter the cherry tomatoes, peel and finely dice the onion. Dice the salmon fillets and fry them briefly on all sides in a pan with a little oil, seasoning with salt and pepper. Remove the salmon cubes from the pan. Meanwhile, cook the gnocchi according to the package instructions. Briefly sauté the onion in the pan until translucent. Add the tomatoes and spinach, fry briefly, and season with salt and pepper. Add the cream cheese and milk and simmer briefly. Drain the cooked gnocchi and add them to the pan. Finally, add the salmon cubes.
