Summer noodles with salmon

Ingredients for 2 servings:

  • 1 zucchini
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tomatoes
  • some Parmesan
  • 1 cup of cream
  • e.g. parsley, flat
  • pepper
  • Salt
  • 250g spaghetti
  • 2 salmon fillets
  • oil
  • possibly sauce thickener

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

quick and tasty

First, heat a little oil in a pan with the squeezed garlic clove. Sauté the zucchini, cut into small wedges, along with the diced onion, salt, and pepper. Meanwhile, season the salmon fillet with salt and pepper and fry in a pan until crispy. Cook the spaghetti in a little oil and salt according to the instructions. Once the zucchini is al dente, stir in the cup of cream (thicken slightly if necessary) and season generously with salt and pepper. Bring the mixture to a boil. Then dice the tomatoes and mix in with the parsley. Immediately pour the hot sauce over the spaghetti and garnish with the salmon fillet and some shaved Parmesan cheese.
