Rince's Straw Widows – Farfalle

Ingredients for 2 servings:

  • 200 g pasta, farfalle
  • 250 g shrimp(s) (king prawns)
  • 1 red bell pepper(s)
  • 1 onion(s)
  • 1 handful of olives, black
  • 2 tbsp olive oil
  • some tomato paste
  • 50 ml red wine (maybe a little more)
  • Salt
  • black pepper
  • 1 pinch of rosemary
  • ½ tsp sugar

Instructions

Working time approx. 8 minutes; Total time approx. 8 minutes

It’s a quick dish. If you dice the onions and bell peppers before cooking, you can do everything at once and have a hot meal on the table in 10 minutes. Dice the bell peppers and onions. Cook the pasta according to the package instructions until al dente. At the same time, heat the olive oil in a pan and sauté the onions until translucent. Add the tomato paste and let it roast slightly. Add the diced bell peppers and fry for about half a minute, then deglaze with the wine. Season with pepper, salt, sugar, and rosemary (just a little). After 2 minutes, add the thawed shrimp and the olives (either whole or halved) and let them simmer until cooked through – this takes about 4 minutes. The pasta should be done by now. Drain and add them to the pan with the bell peppers and shrimp. Mix, let it simmer for another minute, add more seasoning if desired, and serve. Served with some fresh baguette, it tastes great!
