“Carbonara” from my aunt
First, boil the eggs. (I always use ready-made Easter eggs; it’s quicker.) Cut the ham and eggs into pieces. Cook the pasta in salted water. Heat the cheese spread in a medium saucepan until it’s nice and creamy. (Be sure to stay by the pan and stir frequently, otherwise it will burn quickly!) When the cheese spread is nice and creamy, add the cream and mix. Then stir in the eggs and ham. Season to taste with the herbs straight from the freezer. (Be careful not to add too much at once, just a little at a time, otherwise it will be too bitter!) Instead of mixing the pasta and sauce together before serving, as is usual, they are served separately and then mixed on the plate. Note: This dish cooks up quickly; we always have enough for two days.
