Ingredients for 4 servings:

  • 500 g ground Kamut (an old wheat variety)
  • 20 g yeast
  • 350 g buttermilk
  • 10 g salt
  • 10 g syrup (barley syrup)
  • 20 g butter

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Mix the yeast with lukewarm buttermilk, syrup, and salt and wait until it begins to rise, about 10-30 minutes. Then combine the flour and butter, kneading until a smooth dough forms. Let rise, covered, for about 40 minutes at room temperature, and form approximately 10 rolls. Place them on a baking sheet, cover, and let rise for 30 minutes. Then brush with lukewarm milk. Bake in a preheated oven at 200°C for 25 minutes. Sprinkle the rolls with water before, during, and after baking.
