Gratinated pasta nests

Ingredients for 3 servings:

  • 400 g tagliatelle, green, narrow
  • olive oil
  • 2 shallots
  • 1 garlic clove(s)
  • 400 g tomatoes, pureed
  • 1 tbsp tomato paste
  • oregano
  • 3 tbsp crème fraîche
  • 4 eggs
  • salt and pepper
  • 18 balls of mozzarella (mini mozzarella balls)
  • Butter, for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the shallots and garlic and sauté in olive oil. Add the passata and tomato paste, simmer for 10 minutes, and let cool. Cook the pasta until al dente, drain, divide between 18 greased muffin tins, and twist into nests with a fork. Thoroughly mix the tomato sauce with the eggs, crème fraîche, oregano, salt, and pepper. Spread the sauce over the pasta and place a mozzarella ball on top. Bake in the oven at 180°C for about 25 minutes. Serve with a green salad. This batch is enough for three people as a main course. Because the pasta forms nests, it can be beautifully arranged on plates and is also suitable as a standalone appetizer. I used a package of “Galbano Santa Lucia” mini mozzarella, which contained exactly 18 pieces.
