Crumbly sauerkraut stew with tomatoes, green spelt and soy sausages

Ingredients for 3 servings:

  • 100 g green spelt
  • 300 ml water
  • 3 m.-sized onion(s)
  • 3 cloves garlic
  • 500 g sauerkraut
  • 500 g tomatoes, peeled, from the can
  • 1 tsp caraway seeds, can also be omitted
  • 3 tbsp extra virgin olive oil
  • 6 small sausages (soy sausages)

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes

Bring the water to a boil, add the green spelt, and simmer for about 30 minutes. Remove from the heat and cover. Let it simmer for about 15 minutes. Peel and dice the onions and garlic. Heat the olive oil in a saucepan and sauté the onions and garlic. They shouldn’t brown. Add the tomatoes, caraway seeds, and sauerkraut, bring to a boil, and simmer gently for about 20 minutes. Slice the soy sausages, add them to the pan along with the green spelt (including any remaining liquid), and return to the heat. I didn’t add any additional seasoning. If it’s not spicy enough for you, simply add more salt, pepper, and/or paprika.
