Ingredients for 2 servings:
- 3 eggs
- 250 ml rice milk (rice drink) or soy milk (soy drink)
- 50 ml carbonated mineral water
- 250 g flour
- ½ tsp baking powder
- 1 pinch of salt
- ½ bell pepper(s), red
- 100 g salami, sliced
- 1 tbsp parsley, chopped
- 1 tbsp chives, chopped
- salt and pepper
- Paprika powder, sweet
- Oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
with a mixed salad a quick dinner, dairy-free
Using a hand mixer or whisk, make a pancake batter from the first 6 ingredients. Add a little liquid or flour, depending on the desired consistency. Wash the bell pepper and dice very finely. Dice the salami slices as well. Wash the herbs, dry them slightly, and chop them. Stir everything into the batter along with the spices. Heat a little oil in a non-stick pan and fry the pancakes one at a time until golden brown. If necessary, keep warm in the oven at 100°C. Serve with a mixed salad.
