Poultry sausage salad with arugula

Ingredients for 4 servings:

  • 400 g poultry sausage
  • 250 g Gouda or butter cheese
  • 5 gherkins
  • 100 g cocktail tomatoes
  • 80 g arugula
  • 1 small onion(s)
  • 3 tbsp Balsamic vinegar Bianco
  • 3 tbsp rapeseed oil or sunflower oil
  • 1 tsp mustard, medium hot
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chicken sausage, cheese, and gherkins into thin strips. Halve or quarter the cherry tomatoes, depending on their size. Trim the tough ends of the arugula. Chop the leaves into small pieces. Finely dice the onion. Mix everything well in a bowl. Mix the vinegar, oil, and mustard to make a dressing and season with salt and pepper. Toss the salad ingredients with the dressing. Baguette or pretzels go well with this.
