Potato salad Heddus style

Ingredients for 8 servings:

  • 1 ½ kg potatoes, waxy
  • 1 jar Miracle Whip
  • 2 medium-sized onions (very finely diced)
  • 200 g meat sausage, (if possible with garlic) finely diced
  • 200 g gherkins, finely diced
  • 7 eggs, hard-boiled
  • 1 tsp salt (slightly heaped)
  • 1 tsp mustard (well heaped)
  • 50 ml cucumber juice
  • some pepper
  • possibly parsley

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Boil the potatoes, rinse with cold water, peel and allow to cool, then dice finely and set aside. Empty the Miracle Whip into a large bowl and add the salt, pepper, finely diced onions, pickle juice and mustard. Mix thoroughly. Then stir in the sausage and cucumbers. Mix in the potato pieces thoroughly and fold in 6 finely diced eggs. Finish! Season well if necessary. Transfer the salad to a suitable bowl and garnish with the last egg, gherkin and, if available, fresh parsley. The salad can be eaten with just white bread, but can also be served with bockwurst, grilled meat, meatballs, etc. If you omit the sausage, it is also suitable for vegetarians. If you want something a little lower in calories, then only use half a glass of Miracle Whip and the other half with natural yogurt. In that case, it’s better to use less pickle brine and more spices and fresh herbs, like chives, parsley, or even a finely chopped, sweet-sour apple (with the skin on, if you like). The salad also tastes good with gherkins, or with some finely chopped herring. If I have leftover roast meat, I also add it, diced into the salad; it always tastes different, but always just as good!
