- 200 g green olives with stones
- 550 g sugar
- 1 vanilla pod(s)

Rinse the olives thoroughly in a sieve with warm water, drain well, and place in a bowl. Split the vanilla pod lengthwise and bring to a boil with 250g of sugar and 200ml of water. Then boil briskly for 5 minutes. Pour the syrup over the olives and let stand for a day. The next day, strain the olives and vanilla pod. You won’t need the syrup again. Place the olives in a fresh bowl. Bring another 250g of sugar, 200ml of water, and the vanilla pod to a boil and let stand for 5 minutes. Then pour the syrup over the olives. The olives now need to stand for 2 days. After 2 days, strain the olives again, but this time collect the syrup in a saucepan. Add 50g of sugar and bring to a boil. Meanwhile, layer the olives in twist-off jars and pour the boiling-hot syrup over them. Immediately seal the jars and let them cool upright on the lids. If using fresh olives, they must first be debittered in a 10% brine! The olives will keep for 3-6 months.
