White bean soup

Ingredients for 4 servings:

  • 375 g dried white beans
  • 250 g Mettwurst
  • 250 g smoked pork ribs
  • 500 g potatoes, peeled and diced
  • 1 bunch of soup greens, cleaned and diced
  • salt and pepper
  • savory
  • ½ bunch parsley, chopped

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 2 hours; Total time approx. 1 day 2 hours 30 minutes

Rinse the beans and place them in a pot with 2 liters of water. Soak for 24 hours. The next day, rinse the sausage and meat and add them to the pot with the beans. Bring everything to a boil, initially over high heat. Then simmer for about 1 1/2 hours at a low heat. Remove the Mettwurst and ribs and set aside. Add the diced potatoes and soup vegetables to the beans. Season the soup to taste with savory, salt, and pepper. Let everything simmer for another 30 minutes, until the beans are tender. Chop the sausage and meat into small pieces and return them to the pot. Serve sprinkled with parsley.
