Ingredients for 2 servings:

  • 1 large chicken, fresh (approx. 1,500g)
  • 8 potatoes
  • 3 bell peppers, red, yellow and green
  • 1 tsp chicken seasoning
  • 1 tsp honey
  • 1 dashes Worcestershire sauce
  • olive oil
  • salt and pepper
  • Paprika powder, sweet

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with potatoes and peppers

Halve the fresh chicken, rinse briefly if necessary, and pat dry. Peel the potatoes and cut into bite-sized cubes. Trim the bell peppers and cut into strips or cubes. Place the potato cubes and bell pepper strips in a roasting pan or casserole dish and season lightly with salt and pepper. Drizzle over a small amount of olive oil. In a small bowl, mix together some olive oil (2-3 tablespoons), spices, honey, and Worcestershire sauce. Depending on the chicken seasoning, you may need more salt. Place the chicken halves on the potato and bell pepper mixture, skin-side up. Brush the oil and seasoning mixture over the chicken. Roast in the oven at 180°C (fan oven) for about 1 hour, adding the grill for a few minutes towards the end of the cooking time. It only takes a few minutes to prepare, and we think it’s always delicious!
