Ingredients for 4 servings:
- 600 g meat
- 2 red onions (peeled, halved, cut into thin strips)
- 1 stalk(s) leek (washed, cut into strips of approx. 1 cm)
- Salt
- 1 tbsp peppercorns, green
- 1 tbsp peppercorns, red
- 200 ml cream, liquid
- 200 g crème fraîche
- 4 cl wine, white, dry
- Cornstarch mixed with cold water
- butter
- oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Shred the meat. Melt 1 tablespoon of butter in a pan. Sauté the onion strips, add the leek strips, and sauté briefly. Deglaze with white wine. Add the cream, crème fraîche, and pepper, and bring to a boil in the pan. Season the sauce with salt, thicken lightly with cornstarch if desired, and bring back to a boil. Lightly season the shredded meat with salt and sear quickly on all sides in a second pan with a little hot oil. Add the sauce, toss to coat, and serve. Serve with: hash browns, croquettes, and pasta.
