Potato corn cookies

Ingredients for 2 servings:

  • 1 can corn kernels
  • 30 g flour
  • 1 large egg(s)
  • ½ tsp baking powder
  • 100 g potatoes
  • Clarified butter

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

also a good use of leftovers, goes very well with duck breast

Peel the potatoes, boil them in salted water, and mash them. Then combine them with the remaining ingredients and season with salt and pepper. Refrigerate until ready to roast, about 1 hour. Then fry them in hot clarified butter until golden brown.
