Ingredients for 1 servings:

  • 1 tbsp lemon juice, freshly squeezed
  • 3 dashes Stevia, or a pinch of sugar
  • 2 tbsp water
  • herbal salt
  • Pepper, from the mill
  • 3 tomatoes
  • 1 handful of fresh spinach, approx. 25 g
  • 60 g sprouts (lentils), germinated from 2 tbsp lentils
  • 1 tbsp sunflower seeds
  • 1 tbsp olive oil, to taste

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the dressing, thoroughly mix lemon juice, stevia or a pinch of sugar, herb salt, pepper, and 2 tablespoons of water in a bowl. Finely dice the tomatoes. Wash the spinach thoroughly, drain, and cut into strips. Add the tomatoes, spinach, and lentil sprouts to the salad and mix thoroughly. If you like, add 1 tablespoon of extra virgin olive oil. I prefer to eat the salad without oil. Sprinkle with the sunflower seeds.
