Honey Mustard Chicken

Ingredients for 1 servings:

  • 1 chicken breast fillet(s)
  • 1 tbsp olive oil
  • 4 carrots
  • 1 zucchini
  • 1 bell pepper(s), red
  • 1 clove(s) garlic
  • 125 ml milk, 1.5%
  • 1 tbsp honey
  • 3 tbsp Dijon mustard
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Chop the chicken breast fillet, carrots, zucchini, bell pepper, and garlic clove into small pieces and fry briefly in a pan with oil. Whisk together the milk, honey, and mustard and season with salt and pepper. Pour the sauce over the chicken and vegetable mixture and simmer on low heat for about 15 minutes. This is a healthy, low-fat alternative to mayo or cream variations.
