Turkey fillet with spinach and cream cheese filling

Ingredients for 4 servings:

  • 400 g leaf spinach
  • 2 garlic cloves
  • 4 tbsp herb cream cheese 0.1% fat or more
  • herbal salt
  • Pepper, freshly ground
  • 4 turkey breast fillets (150 g each)
  • 2 tbsp rapeseed oil

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean and wash the spinach leaves and spin dry in a salad spinner. Peel and finely chop the garlic cloves. Heat the spinach in a pot and add a little salt. Cook for 5 minutes. Squeeze out the spinach well and collect the liquid. Mix the spinach, garlic and cream cheese and season (a little more strongly). Depending on the fat content, add some of the collected liquid. (The mixture should not be too runny, but spreadable). Discard the rest. Wash the turkey fillets and pat dry. Cut a pocket in the middle of the fillets with a sharp knife. Spread the spinach mixture evenly over the underside of the pocket. Wrap it with kitchen string and tie it, or close the pocket with two toothpicks. Lightly salt the outside of the meat and then heat oil in a pan. Sear the meat evenly on all sides and then cook over medium heat with the lid closed for about 10 minutes. Serve the meat sliced.
