Ingredients for 4 servings:

  • 1 can chickpeas
  • 1 bell pepper(s), red or green
  • 1 small onion(s)
  • 4 small tomatoes
  • 1 can tuna in its own juice
  • ½ lemon(s), the juice
  • 4 tbsp olive oil
  • possibly salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dice the bell pepper and onion. Place both in a bowl along with the drained chickpeas. Squeeze the juice of half a lemon and add it. Add the tuna and its juice, as well as the olive oil, and mix everything together loosely. Add salt, if desired. Refrigerate for 1-2 hours to allow to marinate. Serve with grilled chicken or olive baguette.
