Herring salad with white cabbage

Ingredients for 2 servings:

  • 4 fish fillets (matjes herring)
  • 500 g white cabbage
  • 1 bunch chives, chopped
  • 2 apples
  • 150 g bacon, streaky, diced
  • lemon juice
  • 1 pinch of salt
  • pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Fry the bacon cubes until crispy. Peel the apples and cut them into thin wedges, and cut the white cabbage into thin strips. Mix the white cabbage, apples, chives, bacon, lemon juice, salt, sugar, and pepper. Let stand for about 2 hours. Finally, stir in the herring slices.
