Ingredients for 2 servings:
- 2 tbsp almond butter
- 400 ml water, well warm
- 2 tbsp maple syrup
- 75 g brown sugar
- 2 pinch(s) vanilla powder
- e.g. raisins
- 3 rolls, vegan, very stale, in large pieces (no whole grain)
- e.g. cinnamon
- Margarine, vegan
- 2 tbsp maple syrup, for drizzling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Mix the almond butter with the water, maple syrup, sugar, and vanilla powder. Place the bread pieces and raisins in a bowl and pour the liquid over them. Mix loosely. Let stand for 10 to 15 minutes, until most of the liquid has been absorbed. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Generously grease a small casserole dish, e.g. 21 x 16 cm, with margarine. Pour the bread mixture and any remaining liquid into the dish. Sprinkle with cinnamon, if desired, and place a few margarine flakes on top. Bake the casserole for 40 to 45 minutes, until it is lightly browned and the surface is crispy. Immediately divide between plates and drizzle each with 1 tablespoon of maple syrup.
