Ingredients for 1 servings:
- 600 g cottage cheese
- 500 g quark (low-fat quark)
- 4 tsp sweetener, liquid = 250-300 g sugar
- 12 tbsp spelled, ground, (approx. 190 g)
- 5 eggs
- 1 pinch of salt
- 1 tsp baking powder
- 200 g walnuts
- ½ tsp vanilla (bourbon)
- 30 g ginger, finely weighed
- possibly chocolate sprinkles
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Mix all ingredients, except for the ginger, together. Pour the batter into a springform pan lined with baking paper and sprinkle with chocolate sprinkles, if desired. Bake in a cold oven at 150°C (convection oven) for about 100 minutes. Preheat to 180°C (top and bottom heat) and bake for about 70-80 minutes. After 10 minutes, loosen the ring and remove the cake from the base onto a wire rack using the baking paper. Allow to cool completely before slicing.
