Coconut-banana slices

Ingredients for 1 servings:

  • 250 g butter
  • 200 g honey
  • 4 eggs
  • ½ tsp cinnamon
  • 450 g wheat flour (wholemeal)
  • 1 packet of baking powder
  • 200 g desiccated coconut
  • 450 g banana(s), ripe, mashed

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Recipe from my teaching and wholefood bakery

Cream the butter with honey until fluffy. Stir in the eggs, cinnamon, flour, baking powder, and desiccated coconut. Finally, add the mashed bananas. Spread onto a baking sheet and sprinkle with a few desiccated coconut flakes. Bake at 180°C for about 40 minutes. Tip: The bananas can also be easily pressed through a spaetzle press.
