Omelette wraps with smoked salmon and arugula

Ingredients for 1 servings:

  • 1 small bunch of arugula
  • 3 m.-sized eggs
  • 1 tbsp cream cheese
  • 1 tsp balsamic cream (sweet)
  • ½ pack of smoked salmon
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp chili, optional
  • 2 tbsp olive oil
  • 1 tsp, heaped Parmesan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

simple and low-carb

Crack the eggs into a bowl and beat until scrambled. Lightly grease a non-stick frying pan with oil and fry the eggs over medium heat. When the underside is golden brown, flip the omelet and season with salt. Remove the omelet from the pan and spread with cream cheese. Season with pepper and chili and place a slice of salmon on top. Place a small bunch of arugula around the edge of the omelet. Then roll the omelet into a wrap, not too tightly, not too loosely, making sure to cover the lettuce completely with the first wrap so it doesn’t fall out. Place the finished wrap on a plate and garnish with balsamic vinegar and Parmesan cheese.
