Wash the vegetables and chop them up into small pieces so they can be quickly served later. Put the eggs and cheese in a bowl and mix. Sear the salmon fillet in a little olive oil. While it’s frying, carefully separate the salmon into its natural fibers to create lots of small slices. Fry these until crispy on all sides. Add a generous splash of soy sauce. Briefly fry the crushed garlic clove. Turn off the heat. In a second pan, fry the egg mixture into an omelet. When it’s ready, place it on a plate and spread it with tzatziki. Arrange the crispy salmon on one half and scatter the vegetables on top. Close and serve. Approx. 675 kcal per serving.
