Macaroni with broccoli and parsley sauce

Ingredients for 2 servings:

  • 250 g broccoli
  • 250 g macaroni
  • 125 g tomatoes, cut into wedges
  • 1 garlic clove(s), finely chopped
  • 2 peppers, cut into rings
  • 2 tbsp parsley, finely chopped
  • 40 g Parmesan, grated
  • 3 tbsp rapeseed oil
  • Salt and pepper from the mill

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Cut the broccoli into florets and slice the stems. Add to boiling water and cook for 8-10 minutes. Cook the pasta according to the package instructions. Drain the broccoli and pasta. Heat the oil in a pan and sauté the garlic, tomatoes, and chili pepper rings. Add the broccoli and parsley, heat through, and stir in the Parmesan cheese. Season with salt and pepper. Serve the pasta with the parsley and broccoli sauce.
