Salmon in cucumber and dill sauce

Ingredients for 2 servings:

  • 2 salmon fillets, each 150 g
  • 150 g smoked salmon
  • ½ cucumber(s), deseeded, diced
  • 1 bunch of spring onions, cut into rings
  • 200 ml vegetable stock
  • some lemon juice
  • 100 ml cream
  • some salt and pepper
  • e.g. Dill (fresh or frozen), chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Season the salmon with salt and pepper, and marinate it in lemon juice for a while. Then fry it on both sides in a hot pan and keep warm. Sauté the spring onions in the pan juices. Add the vegetable stock and season with lemon juice, salt, and pepper. Then add the diced cucumber with dill and the cream, and season to taste. Chop the smoked salmon into small pieces and add it to the sauce. Arrange the warm salmon on plates and serve with the sauce.
