Macaroni casserole with meat sausage

Ingredients for 4 servings:

  • 250 g pasta (macaroni)
  • salt and pepper
  • 250 g meat sausage
  • 2 m.-large carrot(s)
  • 2 medium-sized bell peppers
  • 1 m.-large zucchini
  • 1 m.-sized onion(s)
  • 1 tbsp oil
  • 1 tsp sweet paprika powder
  • 500 g tomatoes, chopped
  • 1 tsp vegetable broth, instant
  • 75 g cheese (Emmental)
  • 5 tbsp water

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Cook the pasta in boiling salted water according to the package instructions. Rinse and drain. Remove the sausage skin. Halve the sausage lengthwise and slice. Peel, wash, and dice the carrots. Trim, wash, and dice the bell peppers. Trim, wash, and dice the zucchini. Peel and finely dice the onion. Heat oil in a pan. Brown the onion and sausage in it, then remove. Fry the vegetables in the hot frying fat for about 5 minutes. Season with salt, pepper, and paprika. Add 5 tablespoons of water and the chopped tomatoes. Bring to a boil, stir in the broth, and simmer for about 5 minutes. Fold in the sausage and onion. Finely grate the cheese. Place the pasta and vegetable-sausage mixture, including the sauce, alternately in a large baking dish. Sprinkle with cheese. Bake the casserole in a preheated oven (electric oven 200°C, fan oven 175°C, gas mark 3) for about 20 minutes until crispy and golden.
