Ingredients for 4 servings:
- 1 small onion(s)
- 1 pack of soup vegetables, approx. 350 g
- 1 ¼ liters vegetable broth
- 1 pinch of nutmeg
- 1 pinch(s) of pepper
- 40 g quinoa
- 2 tbsp vegetable oil
- some parsley, chopped

very easy to prepare, inexpensive and tasty
Dice the onion, finely chop the soup vegetables, and briefly sauté them in vegetable oil. Meanwhile, rinse the quinoa with hot water to remove any bitterness from the outer skin. Pour in the broth and add the quinoa. Cook until the vegetables are tender. Season to taste and sprinkle with chopped parsley. Serve with brown bread.
