Bean soup "Piroschka"

Ingredients for 4 servings:

  • 1 onion(s), finely diced
  • 1 garlic clove(s), finely chopped
  • 1 tbsp lard
  • 1 tsp flour
  • 1 liter vegetable broth, strong
  • 500 g beans, finely chopped green runner beans
  • 1 tsp. baking soda
  • 1 bunch parsley, finely chopped
  • 1 red bell pepper(s), cut into small cubes
  • 4 tbsp sour cream
  • Salt and pepper, freshly ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

from green beans

Sauté the onion and garlic in the lard until translucent. Add the flour and sweat gently, stirring constantly. Then pour in the vegetable stock and bring to a boil. Add the chopped beans with the baking soda and cook until soft. This takes about 10 minutes. Remove about 1/3 of the beans with a slotted spoon. Add the parsley to the soup, puree everything finely, and season with salt and pepper. Now add the diced bell peppers to the soup and simmer for about 2 minutes. Return the removed beans to the soup and heat through. Divide among 4 plates. Stir the sour cream until creamy and add 1 tablespoon to each plate to serve. You can also stir the sour cream completely into the soup at the end; do not let it boil any longer. A few chopped sausages are also a good garnish.
