Fried potato medallions

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 200 g clarified butter or other fat
  • 2 sprigs rosemary, fresh

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

a delicious variation of fried potatoes

Boil the potatoes until tender, then peel. Then cut the potatoes into 2-3 cm thick slices and fry them in the fat and rosemary sprigs. It’s best if the medallions are half submerged in the fat. After 5-10 minutes, turn the medallions over and serve. This goes with anything you’d normally eat with fried potatoes. If you want the medallions even thicker, increase the amount of fat accordingly. It works perfectly.
