Breaded vegetables

Ingredients for 4 servings:

  • 1 cauliflower and/or 3-4 large zucchini
  • 4 eggs
  • Breadcrumbs
  • salt and pepper
  • Butter or oil for the pan
  • Garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil cauliflower and/or zucchini slightly, but don’t cook them completely. Then break the cauliflower into small florets, cut the zucchini into finger-thick slices, coat with breadcrumbs, and fry in a pan until golden brown. It tastes great with potatoes and a light sauce. My kids prefer this to the way I prepare the vegetables.
