Coconut Mango Muffins

The perfect coconut mango muffins recipe with a picture and simple step-by-step instructions.

  • 100 g Dried mango
  • 200 g Flour
  • 2 tsp Baking powder
  • 100 g Sugar brown
  • 100 g Ground almonds
  • 50 g Coconut flakes
  • 200 g Yogurt
  • 80 ml Vegetable oil
  • 2 Eggs
  • 6 Bullets Raffaello
  • 50 g Chocolate white
  1. Chop the mango pieces into small cubes. Preheat the oven to 180 degrees.
  2. Mix the flour and baking powder. Beat the eggs and sugar in a bowl, then whisk with the oil and yoghurt. Mix the flour mixture, coconut flakes, almonds and mango cubes together well. Add to the bowl and stir briefly with a spoon until everything is well mixed .
  3. Fill the dough into the silicone molds with a spoon. Bake the muffins in the oven for 20-25 minutes and allow to cool a little. Melt the chocolate over a warm water bath. Carefully cut the coconut confection in half. Pour a teaspoon of chocolate onto the muffins and 1 half of the coconut confection Place on top (or garnish muffins if you like). Let the chocolate set. Serve the muffins.
