Lemon chicken

Ingredients for 6 servings:

  • 6 chicken breast fillets
  • salt and pepper
  • 1 tbsp paprika powder, sweet
  • 50 g flour
  • 8 tbsp butter
  • ½ bunch flat-leaf parsley
  • 1 tsp tarragon, dried
  • 5 tbsp lemon juice
  • 1 lemon(s), for garnishing

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Remove any skin and tendons from the chicken breast fillets and pound them flat. Season the meat with salt, pepper, and paprika, then coat in flour. Heat 2 tablespoons of butter in a pan and fry the chicken breast fillets on both sides for about 5 minutes, until cooked through. Keep the meat warm. Melt the remaining butter in a saucepan, add the herbs and lemon juice, and bring to a boil. Wash the lemon in hot water and slice it. Place the meat pieces in the lemon butter and serve garnished with lemon slices. Serve with rice or a salad.
