Zucchini fritters

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 4 large potatoes
  • 2 small zucchini
  • 2 tbsp flour
  • 2 tbsp bacon cubes
  • 1 egg(s)
  • some salt and pepper, white
  • some oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

vegetarian or vegan possible

Peel the onion and grate it into a bowl. Peel the potatoes and finely grate them. Wash the zucchini, remove the ends, and halve them. Remove the seeds with a spoon. Grate the zucchini as well. Mix the vegetables and squeeze out any excess water using a kitchen towel. Add the remaining ingredients and mix well. Form into fritters in a pan with hot oil and fry until golden brown, pressing the spatula down onto the fritters. Vegetarians can omit the bacon. Vegans can omit the egg and bacon. Serve with herbed cream cheese.
