Apple-carrot muffins

Ingredients for 1 servings:

  • 100 g apple
  • 100 g carrot(s)
  • 100 g buttermilk
  • 100 g millet flour
  • 40 g raisins or cranberries
  • 20 g seeds, chopped (pumpkin seeds, sunflower seeds etc.), or nuts
  • 2 tbsp flakes (Chuffas Nüssli) if available
  • ½ tsp cinnamon powder
  • e.g. coriander powder, as desired
  • 1 tsp cream of tartar baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely grate the apples and carrots. Add the buttermilk, nuts, and spices. Then add the flour and baking powder and mix. Divide the batter among 8 muffin cups (silicone or a greased baking sheet). Bake at 180°C (350°F) top/bottom heat for about 15-20 minutes. Then place the cups on a damp kitchen towel and let them cool. Only then remove the muffins from the cups.
