Austrian-style potato goulash

Ingredients for 4 servings:

  • 70 g bacon, streaky
  • 200 g onion(s), peeled
  • 800 g potatoes, waxy
  • 2 tbsp lard
  • 1 tbsp tomato paste
  • 2 tbsp paprika powder, sweet
  • 1 garlic clove(s), crushed
  • 1 tsp salt
  • 1 pinch of caraway seeds
  • 1 pinch of marjoram
  • 300 g sausage (Mettwurst or Debrecziner)
  • n. B. vinegar
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Finely dice the bacon and onions. Wash, peel, and cut the potatoes into 1/4-inch cubes. Heat the lard over medium heat. Fry the bacon and onions until light brown, then stir in the tomato paste, paprika, and garlic. Add the potatoes and mix well. Cover with hot water, season as desired, and simmer gently over low heat for 15 minutes. Then slice the sausage, add it to the goulash, and let it simmer for 5 minutes. Season to taste with vinegar and a pinch of sugar.
