Leek soup

Ingredients for 4 servings:

  • 1 stalk(s) leek
  • 1 onion(s)
  • 1 tbsp margarine
  • ¾ liter broth
  • some cream cheese, 1 corner
  • 1 shot of white wine
  • ¼ tsp sugar
  • possibly salt
  • some caraway
  • ½ cup cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the leeks, halve them lengthwise, and rinse thoroughly under cold water. Then cut the leek halves into 1 cm-wide half rings. Peel the onion and cut into fine half rings. Sauté the leeks and onion rings in margarine, pour in the broth, and cook for 5 minutes. Whisk in the cheese flakes. Add the wine and sugar, and simmer for 20 minutes. Season the soup again, stir in the cream, and then allow it to simmer.
