Ingredients for 1 servings:

  • 770 g flour
  • 500 g tomatoes, pureed
  • ¾ piece(s) fresh yeast, approx. 30 g
  • 30 g olive oil
  • 2 tsp salt
  • 1 tsp cane sugar or regular sugar
  • ¾ tsp basil
  • ¾ tsp oregano

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours

Sift the flour into a bowl, mix with the salt, make a well in the center, gently warm the tomatoes with the yeast (not too warm, about 35°C) and add them to the well, then sprinkle with sugar on top. Cover and let rise in a warm place for 20 minutes. Then add the spices and knead everything well. Cover and let rise in a warm place for another 40 minutes. Then knead the dough thoroughly again, transfer it to a loaf pan or similar, and let it rest for another 20 minutes. Preheat the oven to 180°C fan/200°C top and bottom heat. Bake the bread for 25-30 minutes. Place a pan of water in the oven during baking. Tip: I sometimes make the bread with fried onions and/or diced ham; feta cheese also works very well.
