For the bread, mix the flour, salt, and sugar in a bowl. Crumble in the yeast. Add 270 ml of lukewarm water. Knead the mixture until no more flour is visible. Cover the dough and let it rest. Pour the dough onto a heavily floured work surface and, using a dough scraper or a knife, divide it into two pieces. Shape each piece of dough into a rope about 40 cm long with your hands and place it on a baking sheet lined with baking paper or in a bread pan. Dust the dough pieces with a little flour, cover, and let it rest. Preheat the oven to 230°C (top/bottom heat) or 210°C (fan oven). Bake the bread for about 30 minutes. For the mushroom variation, heat a little olive oil in a pan. Sauté the onions until hot and season with salt. Add the mushrooms and fry until browned. Season the mushrooms to taste. For the tomato version, dice the tomatoes and onion and season to taste. Mix everything with olive oil and balsamic vinegar. Let it stand for about 10 minutes. Then chop the basil and add it. For the bell pepper version, slice the bell peppers, place them in an ovenproof dish, and season to taste. Preheat the oven to 250°C (480°F). Add the bell pepper strips to the oven, stir once after 10 minutes, and then repeat after 10 minutes. Leave the bell peppers in the oven until they are browned and charred. After baking, slice the bread and briefly toss it in the pan with olive oil and garlic. Then add the various toppings to the bread slices. For the bell pepper version, spread the bread with cream cheese beforehand.
