Ingredients for 1 servings:

  • 100 g mashed potatoes from the previous day
  • 150 g turkey breast fillet(s)
  • 260 g pumpkin flesh (Hokkaido), peeled
  • 200 g plums, fresh
  • 200 ml homemade vegetable broth
  • Fat, for the pan
  • Salt
  • Pepper, mixed, from the mill, as desired

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Turkey strips with potato pancakes and pumpkin and plum vegetables

Cut the pumpkin flesh into bite-sized pieces. Halve the plums, remove the stones, and cut each half in half again. Heat the broth in a saucepan and simmer the pumpkin for about 15 minutes. Add the plum pieces for the last 5 minutes and season to taste. Heat the fat in a pan and brown the shredded pumpkin on all sides, then season. Push the meat to the side, reduce the heat, and briefly brown the mashed potatoes on both sides. Serve everything on a plate. If you like, make a sauce to go with it.
