Ingredients for 6 servings:
- 1 kg minced pork or mixed
- 4 large onions
- 1 kg tomato(s) (vine tomatoes)
- 500 g bell pepper(s), red
- 2 kg zucchini
- 6 garlic cloves, chopped
- 3 tbsp olive oil
- 2 tsp black pepper from the mill
- 1 tbsp salt
- 200 g sour cream
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes
Fry the minced meat in hot oil and season with salt and pepper. Slice the onions into half rings, add them, sweat until translucent and mix into the minced meat. Cut the bell peppers into small strips or dice and stir into the minced meat. Continue to simmer over medium heat. Slice the tomatoes, season with salt and pepper, stir in and continue to simmer. Cut the zucchini into thick slices, season with salt and pepper, gradually add and mix everything together. Now stir in the chopped garlic and simmer over high heat for about 20 minutes. Season to taste. Finally, fold in the sour cream. Serve with a crusty baguette, or with rice or risoni pasta.
